Begun Kaloya
 
  Ingredients:

Brinjal 500 gm

gram flour 1/2 cup

Sugar 1 tablespoon

Green chilli 3 pieces

Ginger 1/2 inch

Currant 75 gm

Oil 1 cup

Cashew nuts 75 gm

Asafoetida 1/4 teaspoon

Turmeric powder 1 teaspoon

Salt to taste

 
 

Procedure

1) Cut brinjals in small cubes. Heat mustard oil in nonstick pan on medium heat. When the oil is hot fry the brinjals cubes for 4-5 minutes turning them over from time to time. Take them out and place aside when they are done.

2) In the remaining oil, add asafoetida and green chilli and fry for 30 sec in low heat. Then add ginger to fry for another 30 sec, and then add gram flour, currant, cashew nuts, turmeric powder and salt. Stir the mixture for 3 to 4 minutes. Add the fried brinjals; turn up the heat to medium again and stir to coat the brinjals with the spices; fry for 2 to 3 minutes.
